This recipe was adapted from a Roy’s Restaurant side dish. The mixture of coconut and sweet just melts in your mouth.

  • Sweet Potatoes
  • Olive Oil
  • Sea Salt
  • Coconut Milk
  • Brown Sugar
  • Cinnamon
Preheat oven 400
Cut off tips of sweet potatoes. Stab with a fork. Rub outside with Olive Oil and Sea Salt.
Bake for 60 mins. Turn 1/2 way between cooking.
Potatoes should be soft. Slit skin of potato and remove inside into a large bowl. Combine potatoes with 1/3 cup coconut milk and 2 table spoons brown sugar and dash of cinnamon.
You can add coconut milk, sugar, and cinnamon to taste. Honestly, I never measure, hopefully the above measurements work out correctly.
