The key to this recipe is the dressing… don’t you dare skip it!


  • Fresh Baby Spinach
  • Bacon
  • Cooking Vinegar
  • Brown Sugar
  • Vinaigrette Dressing – Any flavor you may have in the fridge
  • Onion
  • Mushrooms Sliced
  • Croutons


Cook Bacon on the stove

Remove and cut into small pieces – I like to use Scissors

Pour out Bacon grease and wipe the pan clean – do not wash completely

Cut Onions and sauté in pan for a few minutes – just enough to take away the bite

Remove onions and set aside

Pour 3/4 cup of cooking vinegar and ¼ cup dressing in pan

Simmer over Med/low heat

Add about 4 tablespoons of brown sugar into pan Stirring continuously

Add Bacon and bring to slow boil

Add Spinach, Mushrooms, Onions and Croutons to Bowl and pour on the warm dressing.
