Take note, I stuff chicken with EVERYTHING, this one just so happens to be one of my favorites!


  • 4 Chicken Breasts
  • 1 Jar Roasted Red Peppers
  • 1 Package Tomato and Basil Crumbled Feta Cheese
  • Italian Style Bread Crumbs
  • Parmesan Cheese
  • White Wine
  • Olive Oil
  • Garlic
  • 2 Eggs

Cooking Utensils:

Glass Baking Dish

Preheat Oven to 350

To make Stuffing:

Chop Red Peppers into small pieces

Mix with Crumbles in Medium Bowl

Add a touch of Olive Oil.

Prepare Chicken:

Cut Into Side of Chicken Breast creating a pocket – Do not cut through or butterfly

Stuff Red Pepper and Feta Mix into Pockets – Stuff as full as possible

Beat Egg is small Bowl

Dip entire chicken into egg – Be careful to hold pocket closed

Roll Chicken in Bread crumbs and Parmesan Cheese

Put small amount of wine and garlic in bottom of glass baking dish

Place chickens in dish

Cook for 40-45 minutes at 350

Broil optional for last 2 minutes of cooking – This will brown the tops

I like to serve this with wheat noodles and sun dried tomato pesto.
