I thought I hated meat loaf.. and my husband requested it for dinner. I decided I was going to try, but leave out the stuff I hated… (ie the overly ketchuped blob of goop on top and the dry overcooked brick that I’ve seen come out of other people’s ovens). What I came up with is a masterpiece.. it’s one of my favorite recipes. The sauce is so unique that I could jar it and put it on EVERYTHING!
Ground Sirloin – 1 lb or however much you plan on eating
3 heaping tablespoons flour
3 heaping tablespoons bread crumbs
1/2 yellow onion chopped and sauteed in butter
3 green onions chopped and sauteed in butter
Tomato Sauce 8oz can
1 tsp sugar
3 tblspoons worcestershire
1 tablespoon sweet bar-b-q sauce
1 tablespoon spicy bar-b-q sauce
1 tsp spicy asian mustard
3 tablespoons ketchup
In a small pot combine sauce ingredients and bring to a boil. This will probably happen at a medium heat. Remove from heat and set aside.
Combine all other ingredients in a glass bowl with the meat. Add 2-3 tablespoons of sauce and mix throughly. Add Garlic and Pepper to taste. Put prepared meat into a glass loaf sized pan. I like to leave about 1/2 inch of space at one end of the pan. Cover with foil.
Bake at 400 for 30 minutes. Remove from oven and while still in dish cut slices in meat (this is why I like to leave space). The slices help the meat cook evenly. Top with sauce and cook for an additional 20-30 minutes uncovered. Please note cooking time depends on amount of meat, make sure you check the meat loaf during your first time cooking this recipe.
