We are always looking to incoporate fresh with flavor at my house and this dish does just that. I will include my ingredients, but feel free to add your own.

Ingredients:

  • Jasmine Rice
  • Lime
  • Cilantro (sometimes I just use the squeeze Cilantro paste so I can keep it in my fridge without it going bad)
  • Black Beans
  • Vinegar
  • Garlic
  • Corn (optional)
  • Green Onions
  • Salsa (fresh if possible)
  • Avocado
  • Chicken

Make rice according to directions.

Preheat grill and season the chicken. Sometimes I marinate it with Jerk seasoning, and sometimes I use blackening seasoning and hot sauce. Grill chicken.

Cook beans over medium heat. Add 1 tablespoon vinegar and a clove or 2 of fresh garlic. Toward the end of cooking time, add cooked corn and chopped green onions.

Slice Avocado.

Once rice is done cooking, squeeze lime over rice (1-2 limes depending on how many you are feeding) and mix in 1 teaspoon of Cilantro.

Once chicken is cooked, slice into bit sized pieces.

Build rice bowl as follows:

Cilantro Lime rice mixture on bottom

Follow with black bean and green onion mixture

Add sliced chicken

Top with Salsa and Avocado
