Out of all the copy cat recipes I’ve tried, I think this is the closest one to the actual Carrabbas dinner. Whether or not you agree, this dish is still YUM YUM YUM!
- 4 boneless chicken breasts
- olive oil
- 8 teaspoons fresh garlic
- 8 ounces goat cheese – unseasoned
- 1/4 yellow or white onion – finely chopped
- 2 table spoon butter melted
- 3/4 sticks of butter cold and sliced
- 3/4 cup white wine
- 1 lemon squeezed
- 1 jar sun-dried tomatoes
- 1-4 cup chopped basil
Directions for Chicken:
Season chicken breast with seasalt, pepper and olive oil to taste. Grill until cooked through. Remove from grill and cover to keep warm
Directions for Sauce:
In a pan melt butter and saute chopped onions and fresh garlic until soft. Add white wine and lemon juice. Simmer on medium-low until reduced; should take about 10 minutes. Add cold butter one slice at a time until butter is completely melted.
Combine Chicken and Sauce:
Preheat oven to 400. Top chicken with goat cheese (about 2 ounces) and place in a baking dish or cookie sheet. Bake until cheese is soft.
Combine sun-dried tomatoes, basil, and lemon butter sauce in pan and saute at medium heat until hot.
Put chicken on hot plate and spoon sauce over chicken. This dish goes great with pasta or like Carrabbas serve with garlic mashed potatoes… and of course WINE!
